Ingredients
2/3 cup blueberries
3 ripe bananas, approximately 1 cup mashed
3/4 cup sugar
1/3 cup butter, melted
2 large eggs
2 tsp vanilla extract
1 tsp cinnamon
1 tsp baking soda
1 1/2 cups all-purpose flour
Instructions
Prepare the Bananas: In a large bowl, mash the ripe bananas until smooth, leaving a few small pieces for extra texture and a more pronounced banana flavor.
Mix the wet ingredients: Add the melted butter, sugar, eggs, and vanilla extract to the mashed bananas. Whisk until everything is combined and smooth.
Add the dy ingredients: Add the all-purpose flour, cinnamon, and baking soda. Gently fold everything together until just combined.
Fold in the Blueberries: Gently fold the blueberries into the batter, taking care not to crush them. Reserve a small handful to scatter over the top for a beautiful finish.
Prepare the pan: Line a loaf pan with parchment paper. Pour in the batter and gently smooth the top. Scatter the reserved blueberries over the surface.
Bake: Preheat the oven to 175°C
