Pumpkin Spaghetti

Ingredients

  • 350g pumpkin

  • 3–4 cloves garlic

  • 150g cottage cheese (paneer)

  • Water (as needed to adjust consistency)

  • Chili flakes (to taste)

  • Oregano (to taste)

  • Salt ( to taste)

  • Pasta of your choice- cooked al dente

Instructions

Prep the pumpkin: Cut into chunks and sauté with 3–4 cloves of garlic until soft and fragrant.

Blend: Transfer to a blender, add cottage cheese, and blend until creamy. Add water gradually to adjust the consistency.

Simmer the sauce: Pour the sauce into a pan and cook for another 2–3 minutes.

Spice it up: Stir in chili flakes and oregano or adjust according to your doshic requirements

Pasta time: Toss in your cooked pasta and coat well.

Serve warm — and maybe with a dash of love.
