Ingredients
8-10 pieces soft dates (pitted, halved)

Instructions
Assemble the Clusters
Line a tray with parchment paper.
Place halved dates flat on the paper.
Spread a generous spoonful of peanut butter onto each date.
Sprinkle roasted peanuts over the top for extra crunch.
Chocolate Coating
Drizzle or spoon melted chocolate over each cluster so it partially covers the date + peanut butter layers (allowing gooey bits to peek through).
Freeze & Serve
Place the tray in the freezer for ~30 minutes, until the chocolate is firm.

Homemade Peanut Butter
Ingredients
250g roasted peanuts (skins removed)
1–2 tbsp honey (or natural sweetener of choice)
Pinch of salt
1–2 tsp peanut oil or neutral oil (if needed for smoothness)
Instructions
Dry roast peanuts until golden, then remove the skins.
Blend in a food processor until creamy, scraping down the sides.
Add honey, salt, and oil (if needed) to achieve a smooth, spreadable consistency.

Swap honey for maple syrup or coconut sugar in peanut butter.
Reduce the amount of dark chocolate to avoid excess heat.
